Ingredients
- 600 g carrots, halved lengthways
- 2 tablespoons olive oil
- 2 tablespoons Zesty Za'atar
- Salt

Method
- Heat the oven to 200 C.
- Toss the carrots with olive oil, Zesty Za'atar and a pinch of salt.
- Roast 25 to 30 minutes until caramelised at the edges.
- Spoon over the yoghurt, scatter parsley, and finish with a little more za'atar.
