Bold Butcher's Rub is a premium BBQ rub for ribs, brisket, and pulled pork — hand-blended in Brussels for the kind of slow-and-low cooking that turns a backyard grill into a competition pit. Sweet brown sugar meets smoky paprika, sharp coffee, and a quiet kick of cayenne, building a deep mahogany crust that locks moisture in while the smoke does its work.

Best for

  • Pork ribs — baby back or St. Louis cut. Apply 2 hours before the smoker; expect bark.
  • Beef brisket — full packer or flat. Generous rub overnight; low-and-slow 12 hours.
  • Pulled pork — pork shoulder or Boston butt. Layer rub heavily before the smoker.
  • Chicken thighs & wings — quick char on a hot grill, finish over indirect heat.
  • Roasted root vegetables — sprinkle over carrots, parsnips, or potatoes before roasting.

The pitmaster's approach

For competition-style ribs:

  1. Pat ribs dry. Apply a light coat of yellow mustard as a binder.
  2. Rub Bold Butcher's generously on both sides — pack it in, don't just dust.
  3. Rest for 2 hours (or overnight in the fridge for deeper bark).
  4. Smoke at 110°C / 225°F for 4–6 hours over apple, cherry, or oak wood until internal temp hits 92°C / 198°F.
  5. Wrap in butcher paper or foil for the final 1–2 hours to finish.

Wet rub variation

Mix 2 tablespoons of Bold Butcher's with 1 tablespoon olive oil, 1 tablespoon apple cider vinegar, and a teaspoon of Dijon mustard for a wet rub or quick marinade. Excellent on chicken thighs, pork chops, or even a bone-in ribeye.
